Open for business! First stop, Coyne’s, Eagle, Idaho.
We cannot tell you how happy we are that restaurants are available for dine in again (at least for now)! It was so wonderful to be served delicious food and drink in the company of strangers that were not wearing masks (except those that work at the restaurant).
Coyne’s is located at 676 E. Riverside Drive in Eagle, Idaho. They have built a beautiful stand alone building that has covered outdoor eating as well as indoor eating, and an attractive bar area. The bar area is not open for now, but there is plenty of seating even with tables being spaced at least 6 feet apart. We made a reservation, because we anticipated things being busy as everyone in the area seems anxious to get out again. By the time we left at 6:30, they were nearly full with more people arriving.
We skipped the appetizers this time, but I did order a Coyne’s Caipirinha (Cachaca, rum, lime juice, turbinado syrup, | rocks) which was delicious! I had the Charbroiled Halibut, which was slightly overdone and dry but had a tasty sauce. The accompanying wild rice had a fruity taste to it that was yummy and the asparagus was cooked perfectly. Mike had the Butler’s Steak Risotto, with the bleu cheese risotto, which was very filling and well cooked, but a bit heavy on the bleu cheese. We couldn’t resist dessert when we saw the Brown Butter Pound Cake with Bourbon-Salted Caramel and Candied Bacon! The piece was more than enough for 2, and could go as far as 4 servings. The cake had the most amazing flavor, and was sitting in the caramel sauce sprinkled with the caramelized bacon and a dusting of black salt. A very rich, indulgent and a gratifying end to our first evening out together in six weeks! We will definitely go back, because there is a great variety of salads and sandwiches to try as well.
